When you change a Deployment's Pod template, the controller has to replace old Pods with new ones. The strategy field controls how. The default, RollingUpdate, replaces Pods gradually so the app keeps serving during the change. The alternative, Recreate, deletes all old Pods first and only then creates new ones.
