EndpointSlices and why an empty endpoint list means the selector or readiness is wrong

A Service is only a description. The actual list of Pod addresses behind it is kept in separate objects called EndpointSlices, maintained by a controller in the control plane. kube-proxy and other components on every node watch EndpointSlices to know where to forward traffic. When a Service 'does not work', looking at its EndpointSlices is the fastest way to find out why.
