A container's own filesystem is thrown away whenever the container restarts. Volumes give containers storage that is declared at Pod level under spec.volumes and attached with volumeMounts. Ephemeral volumes live exactly as long as the Pod: they survive container restarts but are deleted when the Pod is removed.
